Phantom doesn't have a traditional Log out button. Your wallet is stored locally on your device and protected by your password, biometrics, Secret Recovery Phrase, or sign-in method. There isn't a session to sign out of like there is with a website or exchange account.
If you want to remove your wallet from the app, reset Phantom. This returns the app to the welcome screen, where you can create a new wallet or import an existing one.
